Ingredients:
1 medium size Zucchini
100 g Cottage Cheese (grated)
5 cloves of Garlic, minced
4 fresh Tomatoes
2 tablespoons of olive oil
10 g of mint leaves
1 teaspoon of pink salt
1 teaspoon of dried parsley or chopped coriander
Salt and pepper to taste
Instructions:
Begin by peeling the zucchini. Use a slicer or knife to get thin zucchini strips. The strips should be thin enough for you to roll them.
Sprinkle pink salt on the zucchini strips and keep them in a colander to drain off excessive water.
Meanwhile, boil the tomatoes and peel off the skin. Once the tomatoes have cooled down, grind them into a puree' along with garlic and mint.
Add salt and pepper to the grated cheese and mix them well.
Take the zucchini strip and lightly squeeze the excess water. You could use a paper towel to remove excess water.
Scoop out a small spoonful of cottage cheese and place it on the starting edge of the zucchini strip. Roll the strip.
Grease a baking dish and start placing the cottage cheese-stuffed zucchini rolls in a vertical position.
Pour the tomato puree over the rolls. Sprinkle cheese if you like!
Bake the dish at 180C for 15 min. Preheating the oven will be helpful.
Serve hot and enjoy the burst of flavour in every bite! Sprinkle coriander or parsley as per your taste.
