Prawns Laksa Curry

Prawns Laksa Curry offers a vibrant and aromatic explosion of flavours. Prawns Laksa Curry is a harmonious blend of textures and tastes—an intricate dance of spicy, creamy, and savoury notes that awaken the taste buds and warm the soul. Ingredients:


Laska Paste

  • 6 dried Red Chillies (Soaked in warm water)

  • 5 cloves of Garlic 

  • 6-10 Cashews (Soaked in warm water)

  • 2-3 inch sliced Ginger

  • 1 tbsp Chilli Paste

  • 1 small Onion (Coasrsely chopped)

  • 1 tsp Olive oil or any vegetable oil

  • 2 tbsp Lime juice


Laska Soup

  • 250 ml Coconut milk

  • 1 tsp Olive oil

  • Thin sliced Vegetables of your choice

  • 1 cup cleaned and deveined Prawns

  • Salt as per taste

  • Slice of Lime

  • 1/2 cup of Rice Noddles (boiled)

  • 1 tsp of Spring Onions (finely chopped)

  • Roasted Peanuts (optional)



Instructions:


  • Make the laksa paste by adding all the ingredients mentioned in a food processor or grinder to make a smooth paste. The paste can be stored in the refrigerator for a week.

  • In a skillet or pot, heat the oil. Add the Laksa paste and sautee it for a minute or two to get the flavour infused in the oil.

  • Add prawns and cook it for five minutes to ensure the raw smell is gone.

  • Then add the vegetables of your choice. I have used carrots and boy choy. You can add bell peppers, mushrooms and zucchini. Don't over-fry the vegetables.

  • Pour in the coconut milk and let it simmer. Once it boils, add salt and lime juice as per taste.

  • Serve the laksa soup in a serving bowl. Add the rice noodles and garnish with spring onions and lime wedges. Sprinkle some roasted peanuts to add crunchiness to the texture.
