Healthy Foxtail Porridge Recipe with Slim Milk, Dates, Nuts, and Fresh Fruits

Starting your day with a wholesome breakfast can set the tone for energy and focus. Foxtail porridge offers a nutritious and tasty option that combines the natural goodness of grains with the sweetness of dates, the crunch of nuts, and the freshness of fruits. Using slim milk keeps the dish light while still providing essential nutrients. This recipe is easy to prepare, packed with flavour, and perfect for anyone looking to enjoy a healthy morning meal.

Foxtail millet is an ancient grain known for its high fibre content and low glycemic index. It digests slowly, helping maintain steady blood sugar levels and keeping you full longer. This makes it an excellent choice for breakfast, especially for those managing weight or blood sugar concerns.

Slim milk adds a creamy texture without the extra fat, making the porridge lighter but still satisfying. Adding dates brings natural sweetness and important minerals like potassium and magnesium. Nuts contribute healthy fats and protein, while fresh fruits add vitamins, antioxidants, and a refreshing contrast.

Ingredients

  • 1 cup foxtail millet

  • 1 cups slim milk (or low-fat milk alternative)

  • 4-5 dates, pitted and chopped

  • 1 tbsp of custard powder mixed in 3-4 tbsp of cold milk (optional)

  • A handful of mixed nuts (almonds, walnuts, cashews), roughly chopped

  • Fresh fruits such as banana slices, berries, or apple chunks

  • Optional: cinnamon or cardamom powder for extra flavour

Instructions

  1. Roast the fox millets and nuts separately. Keep them aside.

  2. Heat the skim milk. Add chopped dates so they soften and infuse the porridge with natural sweetness. Bring to a boil, then reduce the heat to low and simmer for about 10 minutes, stirring occasionally to prevent sticking. You can add custard powder mixture to make it thick and creamy. Keep stirring to avoid lumps.

  3. Remove from heat and pour into a bowl

  4. Add the roasted foxtail millet and nuts.

  5. Stir in protein powder (Optional).

  6. Serve the porridge warm, topped with your choice of fresh fruits and a sprinkle of cinnamon or cardamom if desired.
