Ingredients:
2 medium size Sweet Potato
1/2 cup Feta Cheese crumbled
1/2 cup Cherry Tomato
5-6 Garlic cloves
1/4 cup chopped Spring Onions
2 tbsp Olive oil
Salt, pepper, oregano and chilli flakes as per taste
Mozzarella Cheese (optional)
Instructions:
Preheat the oven to 250C for 10 min.
Clean the sweet potato and prick the sweet potato using a fork. Wrap the sweet potato in an aluminium foil and place it on a baking tray.
Bake the sweet potatoes for about 30 - 40 minutes depending on the size. Use a knife or toothpick to check whether the sweet potatoes are cooked. A knife or toothpick should easily prick through the sweet potatoes.
While the sweet potatoes are getting baked, prepare the tomato and garlic stuffing. In a pan, take a tbsp of olive oil and stir-fry the tomato and garlic. On cooling, mash the tomato and garlic coarsely and add salt and pepper.
Remove the sweet potatoes from the oven and let them cool down.
Mix the feta cheese and tomato-garlic mash. Add salt, pepper and chilli flakes as per taste. The filling is ready.
Once the sweet potatoes have cooled down, slit them in the middle and pinch them open to stuff the filling.
Mix oregano and olive oil. Brush the filled sweet potato with this oil.
Place the stuffed sweet potato on the baking tray lined with parchment paper. Sprinkle spring onions over the filling. Grill it at 200C for 10 min.
Remove the grilled sweet potatoes and dig into them.
You can add grilled chicken, cooked minced meat or cottage cheese into the filling and increase the protein content of the dish.
