Ingredients:


  • 2 cups fresh coriander leaves, finely chopped

  • 1 teaspoon asafoetida (hing)

  • Salt to taste

  • 1 tablespoon oil

  • Water as needed

  • Optional: 2 tablespoons sesame seeds or crushed peanuts


Instructions:


  • In a large bowl, combine the chopped coriander leaves, chickpea flour, ginger-green chilli paste, turmeric powder, red chilli powder, asafoetida, and salt. Mix thoroughly to create a dry mixture.

  • Gradually add water until you achieve a thick but manageable batter. The mixture should hold its shape without being overly wet.

  • Lightly grease a steaming tray or flat dish where the mixture will be poured.

  • Pour the combined mixture onto the greased tray, spreading it evenly to about half an inch thick.

  • Place the tray in a steamer and steam for 15 to 20 minutes, or until firm. A toothpick should come out clean when inserted.

  • Allow the Kothimbir Vadi to cool briefly before cutting into squares or diamond shapes.

  • Heat some oil in a pan and shallow fry the pieces until golden brown and crispy on both sides.
